This  decadent, and sublime hot chocolate- made with Quite The Stir Cocoa Nibs – is worth the effort. Full on chocolate and delicious.

1. Pulse Quite The Stir Cocoa Nibs in a spice grinder until coarsely chopped.
2. Place the cocoa nibs in a 1 qt. microwaveable cup and add 16 oz. milk. Heat on high for 3-4 minutes (160 deg F). Steep at room temp for 30 min.
3. While the cocoa nibs mixture is steeping, combine 6 oz finely chopped bittersweet chocolate, 3 oz sugar, 2 oz water, and kosher salt to taste (1/4 – 1 pinch tsp) in a 1-liter french press and set aside.
4. Following steeping, return the cocoa nibs milk mixture to the microwave and heat on high for 2 minutes or a simmer (185 degrees.
5. Strain the cocoa nib milk mixture into the French press carafe–set for 1 minute and then combine with the chocolate mixture. Press the French Press plunger to areate or froth (10 to 15 times). Serve immediately. (Alton Brown)
