Here is a bit of history to peruse:
The Bellini, or Peach Bellini, is a cocktail made from Prosecco, peach purée, or nectar. It was invented between 1934 and 1948 by Giuseppe Cipriani, the founder of Harry’s Bar in Venice, Italy. Intended as a seasonal specialty, Cipriani dubbed the drink the Bellini for its distinctive pink color. It is said that the drink’s color reminded Giuseppe of the toga of a saint in a painting by 15th-century Venetian artist Giovanni Bellini. Today, both the Bellini and the restaurant are globally renowned.
The Bellini is an IBA Official Cocktail.
